Course Title: Advanced Food and Wine Chefs Diploma
Our Advanced Diploma Course concentrates on the practical, theoretical and managerial aspects of food preparation.
Students complete a seven month intensive training period with TCA where daily "hands-on" practical cooking, baking and theory classes are held.
All subject matter is compulsory and the students are required to pass all examinations and practicals, before being allowed into the industry to complete the next five monhts of the course.
After successful completion of the first seven months, students will then complete a five months paid traineeship at a reputable institution.
The Culinary Academy traineeship works in conjunction with some of Cape Town's finest restaurants and hotels, including Buitenverwachting, The Cellars-Hohenort, Savoy Cabbage and Le Quartier Français.
During this period, the student also returns to TCA twice a month to continue with their tuition. Regular assessment of their progress is also made and this is where each student is then trained in the various sections of a working kitchen and their weekly wage allows them to earn whilst they learn!
Thereafter students return to TCA for another three months of practicals, project work, a wide variety of workshops and final exams.

Evaluation
The students are assessed continuously. Our minimum requirement in all subject matter is 60%. The Culinary Academy also uses external examiners to ensure that we maintain industry related standards of excellence.
Holidays
The Culinary Academy's year is divided into 2 semesters. The students are given one mini break during the first semester and a 4-week holiday prior to the start of their second semester.

Semester 2: Five Months In-Service Training
This entails working in the industry under supervision of an experienced and established chef. While working, you will receive pocket money from the establishment where your in-service training is conducted.
Students will return twice a month to TCA for a day to report on their progress and lectures.
Semester 3: Three Months Practical Including Final Exam
Twice a week you will return to TCA. During this time, any project work, assignments and the Portfolio of Evidence for City and Guilds will be completed - further support and assistance will be given where necessary.
The final Practical and Theory exam will take place at the end of this period.
Compulsory supervised outings to various food and wine producers (depending on season) including short courses such as cheese making, will also be facilitated at no additional cost.

City & Guilds - The Culinary Academy is an approved centre for the international City and Guilds Pitman Qualification
In addition to The Culinary Academy's highly respected Advanced Food & Wine Chefs Diploma, we also facilitate the opportunity for each of our students to obtain further recognised international accreditation with a City And Guilds Diploma in Food Preparation and Cooking (Culinary Arts). Starting Dates and Class Hours
The Culinary Academy offers 2 starting dates annually, January or July. During the first 7-months, class hours are from 8.30am to 5.00pm Monday to Friday. During their traineeship, the student will work industry hours including evening and weekend shifts.
