The Grande Diploma is a 27-months course specifically designed to fast track a student's management career in the hospitality industry.

Curriculum A: Semester 1
The first seven months of The Grande Diploma in Good Food, Fine Wine and Hospitality Management takes place in the TCA kitchen, and includes the following modules:
* Daily practical cooking or baking lessons and demonstrations
* Food and Baking Theory
* Business Management
* Food Technology
* Nutrition
* French Food Terminology
* Wine Theoretical and Tasting (Cape Wine Academy Course)
* Menu Planning
* Food Styling
* First Aid
* Fire Fighting
Curriculum A: Semester 2
Upon successful completion (minimum of 60% average), students will complete 5 months of supervised In-Service training at one of the Western Cape's top restaurants.
This semester entails working in the industry under the supervision of an experienced and established chef.
While working, students will receive pocket money from the establishment where their In-Service training is conducted. Students will also return twice a month to The Culinary Academy for a day, to report on their progress and for lectures.
Curriculum A Semester 3
Twice a week students will return to TCA. During this time, students will complete any project work, assignments and their Portfolio of Evidence for City and Guilds. Further support and assistance will be given where necessary. The final Practical and Theory exam will take place at the end of this period.
Curriculum B Semester 4
All the modules in Semester 4 are compulsory. Students require a 60% pass rate for all modules in order to carry on to the next semester. Classes will are facilitated on Mondays, Tuesdays, Wednesdays, Thursdays and Fridays.

Curriculum B Semester 5
Upon successful completion (minimum of 60% average in all subjects), students will complete 4 months of supervised In-Service training at one of the Western Cape's top hotels, restaurant, event planners or catering companies.
This semester entails working in the industry under the supervision of an experienced and established general manager.
Upon completion of Semester 5, students will return to TCA to write their final exams.
Important notice:
Due to the limited number of students accepted to study the Grande Diploma, students have the option to start with either Curriculum A or Curriculum B, in either January or July, subject to availability.
