The Grande Diploma combines two of The Culinary Academy's most popular courses, the Advanced Food & Wine Chefs Diploma and the Diploma in Hospitality Management.

The Grande Diploma is a 27-months course specifically designed to fast track a student's management career in the hospitality industry.

With over 3,000 hours practical hands-on experience, two international accreditations, an international employment guarantee and the best curriculum currently available outside Europe, the Grande Diploma is the ultimate qualification if you are serious about a career in the hospitality industry.

Curriculum A: Semester 1

The first seven months of The Grande Diploma in Good Food, Fine Wine and Hospitality Management takes place in the TCA kitchen, and includes the following modules:

    *      Daily practical cooking or baking lessons and demonstrations
    *      Food and Baking Theory
    *      Business Management
    *      Food Technology
    *      Nutrition
    *      French Food Terminology
    *      Wine Theoretical and Tasting (Cape Wine Academy Course)
    *      Menu Planning
    *      Food Styling
    *      First Aid
    *      Fire Fighting

Curriculum A: Semester 2

Upon successful completion (minimum of 60% average), students will complete 5 months of supervised In-Service training at one of the Western Cape's top restaurants.

This semester entails working in the industry under the supervision of an experienced and established chef.

While working, students will receive pocket money from the establishment where their In-Service training is conducted. Students will also return twice a month to The Culinary Academy for a day, to report on their progress and for lectures.

Curriculum A Semester 3

Twice a week students will return to TCA. During this time, students will complete any project work, assignments and their Portfolio of Evidence for City and Guilds. Further support and assistance will be given where necessary. The final Practical and Theory exam will take place at the end of this period.

Curriculum B Semester 4

All the modules in Semester 4 are compulsory. Students require a 60% pass rate for all modules in order to carry on to the next semester. Classes will are facilitated on Mondays, Tuesdays, Wednesdays, Thursdays and Fridays.

    *      Hotel | Guesthouse | Boutique Hotel Operations
    *      Entrepreneurship

Curriculum B Semester 5

Upon successful completion (minimum of 60% average in all subjects), students will complete 4 months of supervised In-Service training at one of the Western Cape's top hotels, restaurant, event planners or catering companies.

This semester entails working in the industry under the supervision of an experienced and established general manager.

Upon completion of Semester 5, students will return to TCA to write their final exams.

Important notice:

Due to the limited number of students accepted to study the Grande Diploma, students have the option to start with either Curriculum A or Curriculum B, in either January or July, subject to availability.

London Chamber of Commerce Industry International Qualifications and Educational Development International - LCCIIQ/EDI

The Culinary Academy is an approved centre for the London Chamber of Commerce Industry International Qualifications and Educational Development International (LCCIIQ/EDI) accreditation.


City & Guilds
- The Culinary Academy is an approved centre for the international City and Guilds Pitman Qualification

In addition to The Culinary Academy's highly respected Advanced Food & Wine Chefs Diploma, we also facilitate the opportunity for each of our students to obtain further recognised international accreditation with a City And Guilds Diploma in Food Preparation and Cooking (Culinary Arts). The Food Preparation and Culinary Arts Qualification is globally recognised and provides a set international standard for both theoretical and practical ability. Centre Number: 843267

The Culinary Academy is a member of this non-profit organisation, which represents South Africa's best Chefs, Restaurants, Educators, Students and Food Enthusiasts.


Starting Dates and Class Hours


Students have the option to start in January or July subject to class availability. Students also have the option to start with either Curriculum A or Curriculum B, subject to availability.

Course Requirements Enrolment Requirements

* Applicants must have an absolute commitment to succeed within the hospitality industry.
* Applicants must be a minimum of 18 years of age with a Matric qualification.
* A valid driver's licence and transport is necessary for each student's in-service traineeship.
* Applicants must have a minimum of 300 hours of industry working experience by the time they start their course at The Culinary Academy.
* Applicants from students with learning problems are considered. Oral examinations can be arranged.


Applications to The Culinary Academy must be accompanied by the following supporting documents:

* A written motivation of about 150 words
* A copy of your ID
* Two reference letters
* A copy of your latest school or Matric report, or any other tertiary qualification
* Two passport size photographs
* Your deposit (please refer to the application form for a tick list)

Please note that an application does not constitute a contract between the applicant and TCA until such time as the applicant has received written notice of acceptance. The deposit is non-refundable unless your application has been unsuccessful. The application process takes 7-14 work days to complete and might be subject to a face-to-face interview at The Culinary Academy's offices on the Backsberg Estate.
