Course Title: Cooking with Confidence
Cooking with Confidence is aimed at enthusiastic cooks whether amateur or professional looking to confirm their basic skills with a view to extending their culinary "reach" and to tackle new and challenging recipe.
Format
Each session is broadly structured as follows:
Refreshment on arrival
Theory and underpinning knowledge session
Demonstration
Hands on kitchen practical
Eat and evaluate results
Reflection and summary of learning
Each session the group will prepare a menu comprising five or six dishes (appetizers, soups, breads, various main courses and desserts). A glass of wine will be served each evening and the course includes a session on selecting appropriate wines.
Subjects covered include:
Knife skills * Kitchen equipment and useful gadgets * Preparation and organisation * Cooking methods ? what dictates which to choose * Cold appetizers * Major meat * groups * Cooking with fish * Pasta making * Classic desserts made simple.
Students are supplied with handy notes and recipes to take with them, plus branded Swiss Hotel School full apron.
