Course Title: Certificate in Professional Cookery
The course delivers theoretical and craft based learning covering the fundamental principles of food preparation and the culinary arts. By the end of the course students will be able to create balanced menus, prepare and present a range of good quality dishes in a safe professional fashion. Students will possess the basic skills to work from recipes and have the confidence to develop their ability and produce new dishes.
150 hours of practical experience gained outside the course will be required of each participant. Students who do not have the chance to practice between classes will be provided with internship opportunities towards the end of the course. By the end of the course the students will have compiled a portfolio of evidence supporting unit based assessment required for certification.
Follow up courses in Pastry and Bakery and Hot Kitchen are anticipated in the second half of the year.
