Course Title:   The Diploma in Professional Cookery

The Diploma in Professional Cookery syllabus includes the following topic offerings in a theory based format:

  •     Kitchen Organisation
  •     Staffing and Equipping
  •     Food Preparation Techniques
  •     Kitchen Safety
  •     Kitchen Hygiene
  •     Nutrition
  •     Professional Cookery
  •     Food Purchasing
  •     Food Costing
  •     Stock Control
  •     Menu Planning
  •     Food Service
  •     Food Production
  •     Further topics relevant to Professional Cookery including guest speakers and the use of a kitchen for practicals.

A Certificate in Preliminary Wine Studies is offered as an elective module to Professional Cookery students.

Course Objective:

The course is ideally suited for:
  • Persons wishing to pursue a career as an Executive Chef.
  • Entry level candidates wishing to enter a professional cookery career.
  • Currently employed cookery employees who require formal qualifications.

Notes COURSE VENUE

Course lectures are offered at a central venue in Cape Town.
The Diploma in Hotel Operations and Management lectures are held on Mondays and Thursdays.
The Diploma in Professional Cookery lectures are held on Tuesdays or Wednesdays.
The Diploma in Patisserie lectures are held on Mondays.
It is possible to attend both DHOM and DPC.
All examinations are held at the Lecture Venue.

EXAMINATIONS AND ASSESSMENTS

Students will be issued with the Institute for Hospitality Education (SA) Diploma on successful completion of course requirements as well as City & Guilds International Certification on successful completion of City & Guilds examinations. City & Guilds examinations are held in June and November each year.

ASSESSMENTS

City & Guilds practical assessments are conducted in association with the employer. Once the student has gained employment, a practical assessment form is completed by the employer with the student who returns the completed assessment to the Institute. This assessment is forwarded to the City & Guilds assessor in South Africa for verification and component award.

EXAMINATIONS AND ASSESSMENT REQUIREMENTS

Our students are expected to gain a course average of 60% in order to satisfy the requirement for issue of the course Diploma.

With the exception of the half-course subjects (Hotel Law, Marketing and Industrial Relations), the students are required to sit two examinations of minimum two hour duration and to average 60% in such examination to gain credit towards the Diploma.

Our students who are unsuccessful in such examinations but obtain an examination average between 40% and 59% are able to sit a supplementary examination in order to improve their averages. Students who obtain a course average of less that 40% are required to re-attend course lectures in that subject in order to revisit the examination.

SUPPLEMENTARY EXAMINATIONS

Students who fail a theoretical subject, but obtain a final course mark between 40% and 59%, may enter for a supplementary examination in such subject. Supplementary examinations incur a fee payable by the student.

NB: Supplementary examinations will only be held if there are five (5) or more candidates for such an examination.

Should a student not qualify for the supplementary examination or fail a supplementary examination, the student will be required to re-attend classes for the subject concerned on the next course (subject to availability of classroom space). A subject re-entry fee is payable by the student.

STUDENT PARKING

Our students will be afforded parking near the premises during the course at a place indicated by Venue Management. There is extra security parking on request for which a fee is due and payable to the security management.

PUNCTUALITY

Our students are expected to attend all lectures and to be punctual and present at the lecturing venue.

Students who are absent must produce a medical certificate or a letter from their employer to excuse themselves.

COURSE STANDARDS

As our students are prospective Hospitality Professionals the expectancy and standard of behaviour requirements are high and students are required to be self-disciplined to be successful.

Students who fail to:

Act in the manner required or
Comply with the course and Campus policy

- will find themselves subject to disciplinary procedures which may include expulsion from the course without refund of any fees already paid.

ADMISSION AND ENROLMENT

Detailed Informative sessions are conducted at our office and your attendance is strongly advised. In order for a student to be admitted and enrolled for a programme with the Institute, the student is required to complete and sign the course application form and Conditions of Enrolment.
Students must read all pages of the application form and sign to confirm that they have read and understood all conditions of becoming a student with IHE (SA).p
